Sweet Sour Sauce

Ingredients for Sauce:

  • 3 Tbps vinegar malt
  • 4 Tbps sugar (brown demara)
  • 2 Tbps soy sauce
  • 1 Tbps dry sherry
  • 1 Tbp. Salt
  • 1 Tbp. Cornflour dissolved in 1 cup water
  • 1 Cucumber, sliced & peeled

Mix all the ingredients in a saucepan excerpt the cucumber and the cornflour.

Heat the sauce STIRRING all the time (otherwise the sugar will caramelise and stick to the bottom). Bring to the boil remove from the heat. Add some cornflour put back on the heat and keep STIRRING, repeat this process until all cornflour is gone.

Wait until the sauce thickens, STIRRING all the time. Add the cucumber stir in and take off the heat. Either use now or re-heat it later.
