Baked Cheese Cake

Ingredients for Cheese Cake:

  • 5 Eggs, yolks and whites separated
  • 7 oz of caster sugar
  • 1 Small pot of sour cream (or normal cream and add a teaspoon of malt vinegar)
  • 2 Tbps of self raising flour
  • 6 Degestive biscuits - Crushed
  • 1 Tsp of Vanilla Essence
  • 1 Zest of a lemon
  • 1 lb of Cottage Cheese (500g) - Sieved

Mix the eggs yolks and caster sugar together until throughly mixed. Add the sieved cottage cheese, sour cream and flour. Mix together well. Add the vanilla essence and zest of lemon, stir in.

Whisk the eggs whites in another bowl until stiff. Add the eggs whites to the mixture and fold in - DO NOT STIR!

Grease a cake tin (with a removable bottom) with margarine or butter, cover the bottom of tin with the crushed biscuits make it as even as possible. Add the cake mixture.

Pre-heat the oven (electric) to about 180/190, cook for 45 mins, though check it at 30mins - different ovens cook at different speeds - test to see if its done with a knife, nothing on the blade its done. Turn off the oven and leave in the oven for another 15 mins

Remove from the oven. Take cake out of tin (remember its got a removable bottom). Place somewhere cool to cool down. The cake will sink in the middle, its meant to happen. Once cool, place in the fridge overnight.

Serve it on its own or with whatever you like.
